So it is that time of year again when we give up something for Lent...
This year I have taken on the challenge of going Vegetarian... I have learned alot about this subject so far. I learned that the type of vegetarian that I will be going is Lacto-ovo-vegetarian. Which means I am giving up ALL meat, including fish and poultry, but I will still be eating dairy and eggs. I am looking forward to my adventure into the vegetarian world.
I have already reached day 3 and tend to be going pretty strong so far...
Day 1: Was all about the baked potato and PB&J sammie for dinner... (school night, I have to eat on the run)
Day 2: Was again the PB&J sammie for lunch (I see alot of this PB&J stuff in my immediate future) and had the black bean sliders at Chili's.... I must tell everyone I know about how wonderful the black bean burger is from Chili's. WOW!! Even if I had not given up meat I would order this again in a heart beat... it was absolutely amazing!
Day 3: Off from work we decided to go to the mall, where we had lunch at Subway... what I wanted was a meatball sub, buuuuut what I had was a veggie sub with pepper jack cheese on wheat. For dinner tonight we had cheese quesdillas with beans and Spanish rice with a side of guacamole! Yummy..
Not only am I doing good on my vegetarian journey so far, but JP and I are also running 4 times a week. JP is a wonderful motivator when it comes to the running. I am actually enjoying our runs and think that I will be able to maintain this new lifestyle I have developed for myself.
I am going to attempt to keep the journal going while on my journey to the vegetarian Easter... but we see how well that worked out last time I said I would blog on a regular basis!! lol.

Home Made Chicken Flautas
Hello everyone!!
So I know I have not blogged in a while, but I am going to attempt to put up one of my favorite recipes or something like that each month. This month we start with Chicken Flautas. Yummy!! This recipe was told to me by a co-worker whose mother made me some amazing Flautas to take home with me... So thank you Sara!
Ingredients:
2-3 Small Chicken Breasts
Garlic Powder
Chili Powder
Ground Cumin
Black Pepper
Onion Powder (not pictured)
Package of corn tortillas
toothpicks (not necessary but does make it easier)
Canola Oil
Directions:
1. Place Frozen or thawed chick breasts into pot of water. Add seasonings above to taste. (I prefer more garlic, so for me i put about a teaspoon of them all and then 2 teaspoons of garlic). Let the water come to a boil on medium to high heat. Once at a boil lower heat to low and simmer for 10 minutes. take out one piece of chicken and make sure there is not pink left, if there is cook longer.
2. Place the chicken breasts in a large bowl. Before the chicken cools get 2 forks and begin to shred the chicken. I use one fork to hold it in placed and then slide the fork over the top of of the chicken. Continue doing so until the chicken is to the desired gradient. at this point I add a little bit more spices if it appears enough spices were not absorbed.
3. Heat the tortillas separately in the microwave for about 15 seconds each. After it has been heated place the desired amount of shredded chicken onto the tortilla and tightly roll. Stick finger in both sides to stuff the chicken and add more as needed. secure the roll with a toothpick and set aside for frying (if waiting will later, place in fridge until ready to make).
5. Cool and serve. I personally like to pair it up with some freshly made Guacamole, sour cream, with a side of beans and rice. Sit and Enjoy!!

4. When ready to eat fill a skillet with oil covering the bottom of the pan, set on medium to low heat. Once heated, place flautas carefully in the oil. Once one side is golden brown flip and do other side. removing the toothpick as needed. once the tortilla is golden brown place on a paper towel to drain excess oil.
5. Cool and serve. I personally like to pair it up with some freshly made Guacamole, sour cream, with a side of beans and rice. Sit and Enjoy!!

My First Blog
Hello all the people out there... My name is Ashley and I am going to attempt this whole blogging thing. I frequently visit the Weight Watcher message boards and so many of the girls on there have blogs and have great information on them that I felt inspired to join in and see what all of the fuss is about.
So I guess it is only natural to introduce myself... My name is Ashley. I am 25 years old and I am currently married to my best friend and better half JP. We live in Arlington Texas with our 2 beautiful shepherds that I absolutely adore!! (See pic below). I work for a leading bank's check fraud department and love it! I am also a full time student at the University of Texas at Arlington at night and I am currently majoring in Marketing.. I hope to graduate next year!! (can a get a Alleluia?!?!) I love to read... well to be honest because I am so busy I "listen" to books on tape on my way too and from the office, but I do love books!
The only thing I do want to share is my love for football!! I am really missing football season and CANNOT wait for it to start... Goodness sometimes I just feel the need to yell "Go Pack Go". Sorry I guess I should mention that I am a Greenbay Packer fan.... don't scroll up to check and see if you remember correctly that I live in Texas... yes I do live in Texas. My packers are sometimes one of the best parts of my week during football season. I still have a month to go till preseason... sometimes I wonder if I will make it!! ahhh I NEED football!! Sorry I know... I know... I need to breath and calm down it will be here soon! Thank goodness too!!
Ok well I think I have accomplished my very first blogging session and now it is time for bed... Good night blogging land... and hopefully I will see you again soon!! :)
